yummy hummus recipe

I have been munching on hummus and pita chips all day. Thought I would share this great recipe I found.

Spicy Sweet Roasted Red Pepper Hummus

1 (15 oz) can drained garbanzo beans
1 (4 oz) jar roasted red peppers
3 T. lemon juice
1 1/2 T. tahini butter
1 clove garlic
1/2 t. ground cumin
1/2 t. cayenne pepper (I used about 1/4 t.)
1/4 t. salt
2-3 T. olive oil (I added this extra)

Mix it all in the food processor or blender. Top with chopped parsley before serving if you wanted to make it fancy!

mmmm...mmmm...good!

I felt the need to help your husband out to enjoy a few "not so healthy" snacks.

2 Slices WHITE Bread
2 Cups JIF Crunchy Peanut Butter
1 Cup Welch's Grape Jelly

Step 1 - Separate the slices of white bread, laying them flat on the counter.

Step 2 - Using a knife, spread the 2 cups of peanut butter on top of one slice of bread until it is covered completely. Peanut butter may look thick, but that's ok.

Step 3 - Using the same knife, spread the 1 cup of jelly on the other slice of bread. Make sure that slice is completely covered by the jelly.

Step 4 - Fold the jelly-sided slice of bread on to the peanut butter-sided slice of bread and wait 30 seconds.

Step 5 - The 30 seconds of waiting is provided so that you can grab a plate, cover it in tortilla chips followed by a LARGE package of shredded cheese. Microwave for 30 seconds.

Step 6 - QUICKLY, GRAB THE PLATE OF NACHOS AND THE PB&J AND RUN TO A ROOM WITH A LOCK ON THE DOOR SO HANNAH CAN'T GET TO YOU. RUN SCOTT, RUN! THE DEFIANCE IS WORTH IT, I CAN ASSURE YOU! =)

Ok, that is pretty funny!!! He does like pbj's with alternative grain flax seed bread and organic pb and jelly.

And, we don't have a microwave. Radiation.

Come and visit us. We aren't as weird as we sound!

I know you're not, but even if you were, I'd still love ya just as much as I do now. Definitely need to figure out something visit you guys. Would be a crazy, pizza and garlic cheese stick-filled time. I bet your husband would beg me to stay so that he doesn't have to eat flax seed bread. I'd be willing to try the organic jelly though. We can compromise! ;) Love ya cuz!
